Caprese Sandwich With Homemade Pesto

Ingredients

  • 1 loaf French bread

  • 1 tomato, thinly sliced

  • 3 half slices of mozzarella cheese

  • 3 cloves garlic

  • 2 cups parsley

  • 1/2 cup walnuts

  • 1/2 cup parmesan cheese

  • 3-4 tbsps olive oil

  • Salt & pepper, to taste

Directions

  1. Start by making pesto. Blend parsley, walnut and garlic cloves in a blender until they turn into a smooth paste. Slowly add olive oil until paste smooths. Transfer the paste into a large bowl and add parmesan cheese, salt and pepper. Stir them together until the mixture turns uniform.

  2. Slice the bread in half. Spread pesto on one side evenly. Top with mozzarella and tomato slices.

  3. Spread pesto on other half of bread.

  4. Press the two halves together firmly and place on panini press (or other sandwich machine)

  5. Enjoy!
