Oatmeal S’more Cookies

Ingredients

  • 1/2 cup butter, softened

  • 1/2 cup shortening

  • 1 cup packed brown sugar

  • 1/2 cup sugar

  • 2 large eggs

  • 1 1/2 tsps vanilla extract

  • 3 cups flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 1/2 cups old fashioned oats

  • 1 cup semisweet chocolate chips

  • 1 cup mini marshmallows

Directions

  1. In a large bowl, cream the butter, shortening and sugars until light and fluffy, 5-7 minutes.

  2. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well.

  3. Stir in the oats, chocolate chips and marshmallows; refrigerate until dough is chilled, about 30 minutes.

  4. Roll tablespoons of dough into balls; place 2 in. apart onto greased baking sheets.

  5. Bake at 350° for 8-10 minutes or until golden brown.

  6. Cool for 1-2 minutes before removing from pans to wire racks to cool completely.
